A Dream Born in a Fes Kitchen

What began in 2011 as a small family initiative has blossomed into one of Fes's most beloved culinary experiences. Our Chef, Wiam, grew up watching her grandmother transform simple ingredients into magnificent feasts in their centuries-old riad kitchen.

Those childhood memories, filled with the aroma of simmering tagines and freshly baked bread, inspired her to share the magic of Moroccan cooking with the world.

After years of working in renowned restaurants across Morocco, she returned to her family home to create a space where visitors could experience the authentic heart of Moroccan cuisine.

Preserving Our Heritage

In renovating Palais Riad Reda, we preserved not just the ancient walls and intricate tilework, but the soul of a traditional Moroccan kitchen. Each corner of our cooking school tells a story - from the handcrafted copper pots passed down through generations to the wood-fired oven that has baked thousands of loaves of bread.

Our recipes, too, are treasures inherited from our grandmothers and great-grandmothers, carefully preserved and shared with love. We believe that by teaching these traditional methods and recipes, we help keep our culinary heritage alive for future generations.
